This is a traditional fruit tart with various options.
The images below are of a tart with a sweet pastry base – pâte à sucre – with a chantilly cream and vanilla pastry cream filling, topped with raspberries, strawberries and blueberries.
Variations are as follows:
- for a more delicate base, there is pâte brisée
- the filling – a choice of pastry creams (chocolate, vanilla etc), or simply chantilly cream or a flavoured whipped cream
- the topping – fruits of your choice
