The Concorde

About two years ago, I set about beginning to make more intricate desserts and this was the first. Taken from Pierre Herme’s Chocolate Desserts – one of my pastry bibles!! – I spent a good 10 hours forming this magnificent glory.

Put together, this made a most beautiful chocolate creation. One which I am very proud of, so enjoy the pictures and perhaps, order one yourself!
